
{"id":68,"date":"2008-05-22T20:03:11","date_gmt":"2008-05-23T02:03:11","guid":{"rendered":"http:\/\/ironcheffans.info\/wordpress\/?p=68"},"modified":"2008-05-24T16:42:53","modified_gmt":"2008-05-24T22:42:53","slug":"kitchen-stadium-episode-review-chicken-battle","status":"publish","type":"post","link":"http:\/\/ironcheffans.com\/?p=68","title":{"rendered":"Kitchen Stadium Episode Review: Chicken Battle"},"content":{"rendered":"<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\">Ishinabe vs. Jacques Borie<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\">Originally Airdate: 12\/19\/93<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\">Iron Chef, the Official Book episode# 10<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><a href=\"http:\/\/filehouse.ironcheffans.info\/index.php?act=view&amp;id=47\" target=\"_blank\"><span style=\"'Times New Roman';\"><span style=\"small;\">Iron Chef Collection episode# 110<\/span><\/span><\/a><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"> <\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"><span style=\"1;\"> <\/span>For Kitchen Stadium\u2019s first Christmas battle, a Meilleur Ouvrier de France (MOF) winner is brought in as challenger:<span style=\"yes;\"> <\/span>Jacques Borie, who won the medal at age 36 in 1982.<span style=\"yes;\"> <\/span><\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"><span style=\"1;\"> <\/span>Just as Chairman Kaga is about to summon the Iron Chefs, he asks if Borie understands Japanese.<span style=\"yes;\"> <\/span>\u201cOh yes,\u201d Borie assures him.<span style=\"yes;\"> <\/span>Kaga calls on his Iron Chefs with special fervor, and Borie selects Ishinabe, \u201cthe so-called sauce specialist of French cuisine,\u201d for a French-on-French battle.<span style=\"yes;\"> <\/span>The two smilingly shake hands as the Chairman prepares to announce the ingredient.<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"><!--more--><\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"><span style=\"1;\"> <\/span>\u201cWhen you think of Christmas, you think of only one ingredient.<span style=\"yes;\"> <\/span>An ingredient found in almost all chickens.<span style=\"yes;\"> <\/span>Oh, sorry [Ishinabe laughs at Kaga\u2019s stumble]&#8230; Well, I meant in all kitchens.<span style=\"yes;\"> <\/span>Today\u2019s theme is kitchen&#8230; no, no&#8230; Chicken!\u201d<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"><span style=\"1;\"> <\/span>\u201cOh, no,\u201d moans actress Mai Kitajima, on the commentators\u2019 panel, as the chefs start cutting and degutting their chickens.<span style=\"yes;\"> <\/span>\u201cThis is not my favorite part of this show.<span style=\"yes;\"> <\/span>I guess it comes with the territory\u201d<span style=\"yes;\"> <\/span>(How would she have reacted to a live octopus battle?).<span style=\"yes;\"> <\/span>Joining her on the panel are Dr. Yukio Hattori, and Kenji Fukui.<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"><span style=\"1;\"> <\/span>Ishinabe cuts thick slices of black truffle, and just as Hattori is predicting it will be stuffed under the chicken\u2019s skin, Ishinabe does exactly that.<span style=\"yes;\"> <\/span>The challenger also works on some black truffle.<span style=\"yes;\"> <\/span>It\u2019s chopped into fine bits.<span style=\"yes;\"> <\/span>Some chicken breast is coated with the rich dark bits, and pan-fried.<span style=\"yes;\"> <\/span>Truffles are also used for sauce, in this truffle-abundant battle.<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"> <\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\">Challenger Borie offers two dishes:<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\">\n<ul>\n<li>Fresh Truffle Royale (\u201cUnfortunately, it can\u2019t be taken into account by the tasters, during the judging, as it doesn\u2019t contain any chicken.\u201d)<\/li>\n<li>Chicken Breast Etuve, Truffle Flavor, with Vegetables<\/li>\n<\/ul>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\">Iron Chef Ishinabe presents two dishes as well:<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\">\n<ul>\n<li>Chicken Salad (with ginger, wasabi, yuzu, and soy sauce)<\/li>\n<li>Chicken Demi-Deuil<\/li>\n<\/ul>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"> <\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"> Compared to other episodes, the time spent cooking is shorter (wasn\u2019t this actually a 30-minute battle?), while the commentary is longer&#8211;perhaps it would not be an exaggeration to say, interminably longer. <\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"><span style=\"1;\"> <\/span>On the judging panel are novelist Yasuo Tanaka, Mai Kitajima, and culinary historian Masaaki Hirano.<span style=\"yes;\"> <\/span>What happens when a novelist, whose livelihood is based on creatively putting words together, says everything he has to say about a dish&#8230; but then has to say even more?<span style=\"yes;\"> <\/span>You\u2019re about to find out.<span style=\"yes;\"> <\/span>The funny thing is, he doesn\u2019t do any better than the other two judges.<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"><span style=\"1;\"> <\/span>\u201cThis is really well-balanced,\u201d says Tanaka of the royale.<span style=\"yes;\"> <\/span>\u201cI\u2019m referring to the multiple layers of flavors that come out as you eat it.\u201d<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"><span style=\"1;\"> <\/span>\u201cThis royale is flavored incredibly well!\u201d says Hirano.<span style=\"yes;\"> <\/span>\u201cI\u2019m just out of words to describe this.<span style=\"yes;\"> <\/span>Just&#8230; incredible!\u201d<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"><span style=\"1;\"> <\/span>Tanaka shows his literary prowess by comparing Borie\u2019s chicken breast to a mysterious French lady, whom one has seen many times&#8230;<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"><span style=\"1;\"> <\/span>\u201cI\u2019m moved by the way this was prepared,\u201d adds Hirano.<span style=\"yes;\"> <\/span>\u201cVery delicious.<span style=\"yes;\"> <\/span>This dish speaks of France itself.<span style=\"yes;\"> <\/span>I saw the history of France in both of his dishes.\u201d<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"><span style=\"1;\"> <\/span>Tanaka compares Ishinabe\u2019s chicken salad to a Japanese lady, showing her white and silky skin.<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"><span style=\"1;\"> <\/span>\u201cI think I\u2019ve been fortunate enough,\u201d says Hirano, \u201cto be on the tasting panel whenever Ishinabe-san has been cooking so far.<span style=\"yes;\"> <\/span>He is so skilled in creating a story in his dishes, and today, in a subtle way, well&#8211;chicken is quite a weak ingredient in flavor, you know&#8230; not that powerful, so I think it\u2019s important to choose the right seasons to flavor it, and he tried not to over-cook the chicken, as Tanaka mentioned, trying to maintain the natural flavor of the chicken&#8230;\u201d etc. etc. etc.<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"> <\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\">Side notes:<span style=\"yes;\"> <\/span>I thought I recognized morels in Ishinabe\u2019s main dish, and the Iron Chef verified this to the tasting panel.<span style=\"yes;\"> <\/span>An interesting coincidence:<span style=\"yes;\"> <\/span>I\u2019d just this past weekend gone looking for morels on our property&#8211;and actually found a few!<span style=\"yes;\"> <\/span>They were seriously delicious.<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\"> <\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\">Rodney Schroeter<\/span><\/span><\/p>\n<p class=\"MsoNormal\" style=\"none;\"><span style=\"'Times New Roman';\"><span style=\"small;\">May 2008<\/span><\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Ishinabe vs. Jacques Borie Originally Airdate: 12\/19\/93 Iron Chef, the Official Book episode# 10 Iron Chef Collection episode# 110 For Kitchen Stadium\u2019s first Christmas battle, a Meilleur Ouvrier de France (MOF) winner is brought in as challenger: Jacques Borie, who won the medal at age 36 in 1982.
