The challenger is a chef at Kihachi China. He trained under and worked as the right hand man to two-time challenger (and Shin Tetsujin) Wakiya Yuji. He was head chef at a restaurant started by Wakiya and Iron Chef French Ishinabe. The theme ingredient is super fresh as it was delivered from China that day.

The challenger is a chef who creates traditional French dishes and will not be influenced by fads. He trained at the best of restaurants in France, learning the latest trendy dishes. When he returned home, he found that 80% of his customers were native French who preferred more authentic French cuisine.
Chef Keiji Azuma is currently the head chef at Chez Azuma in Shibuya, Tokyo.
